Lunch | Veggie Wrap

Howdy everyone!

I just had lunch and thought i'd share what i made with you :) If you ever feel like making this you can change some things around this is just what i use. 
(vego/vegan friendly recipe) 

Preparation time: 15 mins

Serves: 1

Ingredients:
  • Two Rye (mountain bread) Wrap sheets
  • a hand full of baby spinach leaves
  • 5-10 green beans
  • half a large tomato -sliced 
  • a small carrot -grated
  • 2 asparagus stalks
  • 4 baby mushrooms -sliced
  • 1/3 of an avocado
  • Avocado oil to cook

Method: Before anything wash all the vegetables thoroughly.

Place a small pot half way full o water on the stove top on medium heat till boiling.

Like it stays in the ingredients i grate the carrot and slice the mushrooms & tomato and place that to the side.
Cut about 1 cm no more on each end of the green beans. With asparagus the best way to know where to break the end of is to hold with your thumb and index finger of one hand on the bottom and with the other hand in the middle of the asparagus and bend it until it snaps. 
Place both the green beans and asparagus in the water and boil for around about 5 minutes or until bright green. This can deffer from person to person, some people like their boiled greens crisp and crunch and others like it soft and mushy. 

While that is boiling i cook my mushrooms. Put a fry pan on med-high heat with about 1 large table spoon of avocado oil. Place the sliced mushroom in the pan and cook for 5 odd minutes stirring every minute and more consistently near the end of the cooking time.

One both the green beans/asparagus and mushrooms are done it it time to do the avocado.
You can simply have this sliced but i like to make it into a paste so i just cut it into cubes and mush it with a fork until it is spreadable.

Finally it is time to assemble your wrap! 
I spread the avocado first onto one of the sheets of bread, layer the baby spinach, grated carrot and the tomato, them on top of that goes the mushrooms, green beans and asparagus. Lastly uou have to role it up, because the sheets are very thin  it will tare, so you add the second sheet over the outside.


AND THERE YOU HAVE IT!

I wasn't expecting this it taste extremely delicious, rather just quite good, but it was actually supper yum!! and very healthy and nutritious for you!
